Peanut Brittle

2 cups sugar

dash of salt

1/2 cup water

1 heaping tsp. soda

1 cup light Karo syrup

1 tsp. vanilla

2 cups raw peanuts

Combine sugar, water and Karo syrup in a heavy large saucepan and boil to a hard ball stage.  Remove from heat and add raw peanuts and salt.  Mixture will be thick.  Return to stove and boil until mixture is golden brown and nuts smell done.

Take off stove, add baking soda and vanilla.  Pour out on well buttered surface and smooth to thin.  If thicker pieces are desired, simply spread mixture over smaller surface.

Crack when cooled.
